White Cheddar and Chive Beer Bread
Nothing ushers in spring like the light tastes of chives, a crisp golden ale and white cheddar cheese. You’ll find all that and more in our White Cheddar and Chive Beer Bread!
All of the ingredients are hinting at St. Patrick’s Day, but you can make this amazing bread any time of year. Here we’ve made the loaf with Irish oats, Guinness blonde beer, shredded Irish white cheddar cheese, fresh chives and even Irish butter. You can find most of these ingredients in your local grocery store.
This recipe has a little bit of sneaky science. The White Cheddar and Chive Beer Bread leverages the yeast in the beer, which reacts with the sugar and baking powder making it rise. We use an ale because it pairs well with the white cheddar cheese.
Serve our White Cheddar and Chive Beer Bread with a green salad and tomato bisque soup. The bread is also terrific paired with Irish butter or used for sandwiches the next day.
Our White Cheddar and Chive Beer Bread starts by grounding the oats. Next, sift the flour (it gets lighter and easier to mix with the other ingredients, producing a better bread!) and baking powder together. Add the salt, spices and pepper, then the ground oats. In another bowl sized, combine the beer, melted butter, sugar and honey together. Add the wet ingredients to the dry.
Gently stir the ingredients until the craggy thick batter forms (do not over mix). Add the shredded white cheddar cheese and chives and stir just until blended. Spread the batter into the prepared pan.
Next, generously brush the melted butter over the dough. Sprinkle the shredded white cheddar cheese over the melted butter and 1 tablespoon of the whole rolled oats as shown.
Bake until golden (the butter gives it a beautiful color), rotating the pan in the oven halfway through the baking time and carefully sprinkling the remaining tablespoon of rolled oats over the bread. Continue baking, and cover with foil during the last five minutes. Remove the bread from the oven. Release from the loaf after 10 minutes of resting in the pan and set on a cooling rack until room temperature.
The White Cheddar and Chive Beer Bread is easy for beginners. You will need a small personal blender for this recipe.

- 1 cup of rolled oats, Irish preferred
- 2 cups of all-purpose flour
- 1 tablespoon of baking powder
- 1 teaspoon of each salt, garlic, thyme and onion powders
- 1/8 teaspoon of pepper
- 12 oz Guinness blonde beer, room temperature
- ½ stick of melted butter
- ¼ cup of granulated sugar
- 2 tablespoons of honey
- 1 ½ cups of shredded Irish white cheddar cheese
- ½ cup of fresh chives, finely chopped
- 2 tablespoons of melted butter
- 1 tablespoon of shredded Irish white cheddar cheese
- 2 tablespoons of rolled oats

How to cook White Cheddar and Chive Beer Bread
- 1. Preheat oven to 350°F. Prepare a 9x5 loaf pan with parchment paper and cooking spray.
- 2. Pulse the oats in a small personal blender until finely ground. Set aside.
- 3. In a large bowl, sift the all-purpose flour and baking powder together. Add the salt, spices and pepper, then the ground oats.
- 4. In a medium sized bowl, combine the beer, melted butter, sugar and honey together. Add the wet ingredients to the dry.
- 5. Gently stir the ingredients until the craggy thick batter forms (do not over mix). Add the shredded white cheddar cheese and chives and stir just until blended. Spread the batter into the prepared pan.

Bake for approximately 40-47 minutes or until golden, rotating the pan in the oven halfway through the baking time and carefully sprinkling the remaining tablespoon of rolled oats over the bread. Continue baking, and cover with foil during the last five minutes. Remove the bread from the oven. Release from the loaf after 10 minutes of resting in the pan and set on a cooling rack until room temperature.
- 8. Store in an airtight container at room temperature. Best eaten within 1-2 days of making the recipe.
NOTES:
• If you would like to freeze the room temperature White Cheddar and Chive Beer Bread, seal in a freezer bag.
