Healthyish Brownies
Here's a healthy-ish recipe that has all kinds of good nutrition including avocado, black beans, dark chocolate and oats! Believe it or not, my kids suggested we test out brownies using avocado and black beans, and after many tries, this is our winner.
Avocados are loaded with healthy fats, fiber and important nutrients, and so much more than a vehicle for guacamole! Their silky texture is perfect for baking once ripe and mashed.
You can’t taste the avocado or the black beans, it just tastes like a yummy dessert!
To make the Healthyish Brownies extra fudgy and gluten free, omit the all-purpose flour or ground old-fashioned oats. The texture becomes a cross between rich fudge and brownies. We've been known to scoop half of the flourless batch into balls, roll in coconut and freeze as truffles!
You can make the Healthyish Brownies completely in a blender or food processor! Be sure to remove the lid and stir often.
The Healthyish Brownies start with preparing a baking pan with parchment paper. In a standard blender, puree the mashed avocado, black beans, maple syrup and oil together. Remove the top and stir with a large spoon, as necessary.
Add the brown sugar, salt, extract and eggs. Next, up is the dry ingredients: the flour or oats, cocoa, baking soda, baking powder, blending until combined, creating a thick dough. Remove the top and stir again with a large spoon, as necessary. By hand, fold in the 1 ½ cup of chocolate chips. Press the dough evenly into the prepared pan.
Bake for 40-45 minutes, covering the brownies during the last 5 minutes of baking time. Sprinkle the remaining chocolate chips on top after the brownies are out of the oven. Let the brownies cool on a rack to room temperature before cutting for best results and taste.
The Healthyish Brownies are easy for a beginner baker.
Healthyish Brownies
Ingredients:
- 1 ripe avocado, mashed
- 1 15oz. can of black beans, drained and rinsed
- 1 cup of maple syrup
- ¼ cup of vegetable oil
- 1 cup of brown sugar
- ½ teaspoon of salt
- 2 tablespoons of vanilla extract
- 2 eggs
- 1 ¼ cups of all-purpose flour (or ground old-fashioned oats if gluten free)
- ¼ cup of unsweetened baking cocoa, dark chocolate preferred
- ½ teaspoon of baking soda
- ½ teaspoon of baking powder
- 2 cups of semi-sweet or dark chocolate chips, reserved
Instructions:
- Prepare a 8x8-inch baking pan with parchment paper. Preheat the oven to 350F.
- In a blender, puree avocado, black beans, maple syrup and oil together, 4-5 minutes. Remove the top and stir with a large spoon. Add the brown sugar, salt, extract and eggs. Remove the top and stir with a large spoon. Add the flour or oats, cocoa, baking soda, baking powder, blending until combined, creating a thick dough. Remove the top and stir again with a large spoon. By hand, fold in the 1 ½ cup of chocolate chips. Press the dough evenly into the prepared pan.
- Bake for 54-57 minutes, testing the brownies with a toothpick to make sure it comes out clean.
- Sprinkle the remaining chocolate chips on top after the brownies are out of the oven. Let the brownies cool on a rack to room temperature. Store in the refrigerator.
